Tortilla Soup

Tonight we are having Tortilla Soup.  This is what I have on hand and I'm using tonight. :)


5 Chicken Breast Cooked 
*( You can add frozen and boil until done and the cut up and add veggies or I sometimes cook all together and   when Chicken is done pull out the chicken to cut up.)
Chicken Broth 
1 small onion chopped
2-3 carrots sliced
1-2 celery chopped
1 can Rotel or (You can use: canned tomatoes, fire roasted tomatoes or fresh diced up.)
1 can Hominey
2 yellow Squash sliced
1 can green chilis or some jalapenos to taste.
Cilantro, Cheese, Sour Cream or Cream Cheese & Tortilla Chips to Top.


I cook the soup until all veggies are done and Chicken is done and ready. Then top with whatever toppings you like.

Cauliflower Pizza Crust

I must try this. Found it on Pinterest.  Of Course I started following this blog too. :)

Cauliflower Crust
Makes 4 individual pizzas
2 eggs
2 cups mozzarella cheese
2 cups riced cauliflower (grate the cauliflower on a cheese grater)
2 garlic cloves, minced
1/4 cup fresh julienned basil

Pizza Toppings
1 cup marinara sauce (1/4 cup per pizza)
1 zucchini, thinly sliced
1 yellow zucchini, thinly sliced
1/2 white onion, thinly sliced
Basil Ricotta (recipe below)

Preheat oven to 450 degrees.

Line a cookie sheet with parchment paper, spray with non-stick spray.

In a medium bowl, combine riced cauliflower, basil, eggs and mozzarella. Divide into 4 amounts and press evenly on the parchment paper. 
*you can omit the basil or sub it for others herbs of your choice. 



Bake the crusts at 450 degrees for 12-15 minutes.
*I went for about 13 minutes and wish I had gone to 15 minutes. But that's just a taste preference.

Remove the cookie sheet from the oven. 


Put toppings on and Place back in the oven until cheese is melted, about 5 - 10 minutes.

Pankcakes

potato pancakes
1 cup dehydrated potato flakes
1/2 cup skim milk or fat free half and half
3 raw egg whites or 1/4 cup Egg Beaters
2 tsp. onion bits
1/2 tsp. garlic salt
1/4 cup diced scallions or to taste
2 tbsp. pancake mix
Mix potato flakes with skim milk and egg whites. Stir in onion bits, garlic salt, scallions and pancake mix and stir well. If mix appears too dry, add more skim milk. Preheat skillet over medium heat with butter flavored cooking spray. Place heaping Tablespoons of mix onto skillet. cook until lightly brown, flip and cook until the other side is golden brown. Serves 3

Fruit Flavored Pancake
3 raw egg whites
1/4 cup uncooked oatmeal
3 tbsp. any flavored low sugar preserves
2 tbsp. additional preserves
Place all the ingredients in the blender and mix on low. Spray a Teflon pan with buller flavored cooking spray and preheat pan over medium heat. Pour mixture into a Teflon pan and let cook until slightly firm. Turn cake over and let cook another 3-5 mins. Remove from heat and spread additiona preserves/Sugar Free Syrup over pancake and serve. Serves 1
*I use a smaller frying pan about the size of the pancake, it’s more runny than regular pancakes and this helps keep it’s shape.  We have also made them with apricot and cinnamon and it’s yummy or add Chocolate chips too. We use Sugar Free Syrup.

Erinn's Smokin Salsa

erinn’s salsa
1 Large Can Whole Tomatoes
2 cans rotel
2 whole japalenos
1/2 onion
1/2 orange bell pepper
5 splashes of Mesquite liquid smoke
1/2 tsp Chipotle Chili pepper
1 tsp salt
1/2 tsp black pepper
1 bunch of cilantro
Juice of 2 limes
2 garlic cloves
Combine all ingredients in the blinder except one can of rotel and cilantro, blend all together in a blender, pour in a large bowl. Add rotel and cilantro and blend, then pour with the rest of salsa mixture and stir well. Makes about 3 to 4 jars full of salsa.
 

Enchiladas *inspired by my Sister! :)

green chicken enchilada casserole
4 to 5 Chicken Breast cooked and cut or or shredded
1 jar Herdez Salsa Verde
1 16 oz. Sour Cream
1/2  block of Cream Cheese
1/4 onion
1 bunch of cilantro
1 can of green chilies chopped or a jalapeno or two
*Add all above and put in blender, blend up until smooth. This is your sauce for the casserole.  Save some for after it bakes to add on top if you like.
18 corn tortillas
1 can of corn
4 cups of cheese
cumin
chili powder
*bottom layer, green sauce, 6 tortillas, 1/3 of chicken, 1/3 can of corn, cheese,sprinkle cumin and chili powder on top for extra flavor. Then repeat another layer same way, last layer when done add green sauce and more cheese to end.  Bake 350 for about 30 to 40 mins. I like to broil it the last few mins to make the cheese brown some. 
Serve with some of the sauce drizzled on top if you would like or with the salsa above. :)

broccoli Slaw

broccoli slaw
1 bag of Broccoli slaw
1/3 bag of shredded Carrtos
1 bell pepper (any color)
Red Onion about 1/4 or less to your taste
fresh broccoli cut up into pieces. About i small head of broccoli
hand full of Pecans
Feta or blue cheese to top 
Dressing:
Dijon Mustard
Bisalmic Vinager
salt and pepper
few packs of sweetner
I mix together about double the vinager to the mustard and add seasoning to taste.

turkey roll ups

turkey roll ups
1 Slice of Turkey
1 Slice of Cheese, I used ColbyJack
Cream Cheese
3 sliced jalapenos
place Turkey and Cheese together, spread Cream Cheese in the center, place jalapenos on top and roll up. Easy snack and yummy. :)

Guacamole 
2to3- avacados
2- Roma tomatoes
1/2 a block of cream cheese 
Chopped red onion to your taste
JalapeƱos chopped (if in the a jar about 5-7slices) and I add some of the juice.
Cilantro 
Lemon or Lime juice to taste
Salt & pepper
Rattle snake dust sprinkled (can use red pepper) in mash all together until cream cheese is mixed well with avacadoes. 
Tonight a made it and I had it on hotdogs with a little cheese & sweet & spicy jalapeƱos on top. So yum!

My Curry Dish

sweet curry dish
3 sweet potatoes peeled and cut up in chunks
1-2 new potatoes peeled and cut up in chunks
About a Cup of chopped carrots
1 large box of chicken broth
1 med yellow onion chopped
1 can Lite coconut milk
heavy cream if needed to thicken a little
sweet curry
cummin
Salt & Pepper
Cilantro
Chili sauce
Cooked Jasmin Rice to serve over and I baked Chicken in the over to add to top.
Sautee onion with some cummin and curry, then add carrots, and potatoes. Add broth cook down all ingredents and Salt, pepper and more cummin and curry to taste. I add more water and chicken bullion if I need more chicken broth. add coconut milk and cook about 5-8 mins longer and add heavy cream if you need to thicken it more. When done. Serve over rice, place sliced up chicken strips on top with some cilantro and chili sauce if you would like.

Cream Corn

I made this up the other night and the kids didn’t even notice that it has a little jalapeno juice to it. :) Sorry I don’t have real specific way to make it.  I just can’t help it that’s the way I cook. 

Cream Corn
Large size bag of frozen CORN
1/3 to 1/2 block of fat free CREAM CHEESE
About 3 TBSP of Cheddar Jalapeno Cream Cheese from HEB.
You can also add 1/3 of a Cup of any kind of CHEESE if you would like.
About 1-2 TBSP of Juice from Sliced Jalapeno Jar from fridge.
Or I sometimes use a small can of mild diced Green Chilies. 
Some half and half if you need it to be creamer.
Salt and Pepper to Season

Bake 350 for about 20 mins until bubbling.  
Microwave about 8+ mins.
