Pankcakes

potato pancakes
1 cup dehydrated potato flakes
1/2 cup skim milk or fat free half and half
3 raw egg whites or 1/4 cup Egg Beaters
2 tsp. onion bits
1/2 tsp. garlic salt
1/4 cup diced scallions or to taste
2 tbsp. pancake mix
Mix potato flakes with skim milk and egg whites. Stir in onion bits, garlic salt, scallions and pancake mix and stir well. If mix appears too dry, add more skim milk. Preheat skillet over medium heat with butter flavored cooking spray. Place heaping Tablespoons of mix onto skillet. cook until lightly brown, flip and cook until the other side is golden brown. Serves 3

Fruit Flavored Pancake
3 raw egg whites
1/4 cup uncooked oatmeal
3 tbsp. any flavored low sugar preserves
2 tbsp. additional preserves
Place all the ingredients in the blender and mix on low. Spray a Teflon pan with buller flavored cooking spray and preheat pan over medium heat. Pour mixture into a Teflon pan and let cook until slightly firm. Turn cake over and let cook another 3-5 mins. Remove from heat and spread additiona preserves/Sugar Free Syrup over pancake and serve. Serves 1
*I use a smaller frying pan about the size of the pancake, it’s more runny than regular pancakes and this helps keep it’s shape.  We have also made them with apricot and cinnamon and it’s yummy or add Chocolate chips too. We use Sugar Free Syrup.
