Pizza and Game Night

Last Friday Night we went to friends for a game night. I made more pizza bites with spinach, artichokes & black olives. They were super yummy. The kids even liked them. My friend Dori made homemade pizzas too. This one is Jalapeno & pepperoni!



Chicken Enchilada Soup

I made this soup this week, I'm in a healthy cooking group and it was my week to pick a recipe. I served this at our Oscars Party and I'm making it again tonight because I wanted 2nds and there was none. :)  I omitted the beans and green chilies because I was out. It will still be so yummy. Can't wait for dinner! Enjoy!

5 Chicken Breast
1 med chopped onion
1 can fat free cream of celery soup
1 can of water
1 can mexican style tomatoes with pepers
1 can rotel mild
1 can mexican style corn
1 can of black beans
1 can red enchilada sauce
1 can of diced chopped green chilies mild
1 block of fat free or 1/3 less fat Cream Cheese (could sub with greek yogurt)

-Place chicken in crockpot/slowcooker
-add all ingredients on top, except the cream cheese and cook for 6 hours.
-add the cream cheese diced up and stir in the last hour and stir a few times and let it melt into the soup.
-take chicken out and shread or cut in to chuncks and put back in to pot.
-Serve with toppings....quacamole, cheese and greek yogurt. My kids like it with tortilla chips too.

Pizza Bites

Pizza Bites

4 oz cream cheese


2 eggs


1/4 cup Parmesan or Romano


1 teaspoon Italian seasoning


1/4 teaspoon garlic powder


3/4 tsp baking powder


8 ounces shredded mozzarella or any other cheese or combo


4 ounces chopped pepperoni

DIRECTIONS


Preheat oven to 375. 


Mix all ingredients and pour evenly into greased muffin pan.


Bake 20 min. or until the tops are browned. Serve with pizza sauce.


You may choose any kind of meat or veggies to add to these also.  I added some sharp


cheddar to mine and they came out great!  


***My next batch I want to try ricotta cheese instead 


of the Cream Cheese to add more protein. I'll post and update when I do try it to see if they 


taste the same. This version was amazing!

Goat Cheese Dip & Buffalo Meatballs


Goat Cheese Dip (without the fat!) 

Ingredients
1 garlic clove, crushed
2 tsp minced shallot
1 tbsp. of red wine vinegar
1 tsp. of Worchestire
2/3 cup of plain no fat Greek yogurt
2 tbsp of crumbled goat Cheese
1 tbsp of skim milk
Salt and pepper

Directions
Combine all ingredients and enjoy!
Serve with veggies. Carrots, celery, bell peppers and cucumbers.
Makes 6 - 2t bsp. servings


Buffalo Meatballs

Ingredients

1 pound ground turkey
1 pound lean ground beef
1 pound lean ground sausage
1/2 small onion, grated
2 cloves garlic, grated
1 shallot chopped
1/2 cup parsley, chopped
2 tsp of smoked Paprika
1 tsp cayenne pepper
Salt and freshly ground black pepper
1/2 cup hot sauce
1/2 cup ketchup
Tbsp mustard
2-3 Tbsp Honey

Garnishes: Goat Cheese, Feta or Blue Cheese Crumbles
A couple of handfuls celery sticks and Carrot sticks


Directions

Preheat oven to 400F.
In a large bowl, combine the ground meats, onion, garlic, parsley, paprika and cayenne.Season with salt and black pepper.

Take about two tablespoons of meat mixture and roll between the palms of your hand to form a meatball about the size of a golf ball.
Place meatballs on a rimmed baking sheet lightly coated with cooking spray.Pop them in the oven and cook for 15-20 minutes or until they are cooked through.
While the meatballs are baking, heat the hot sauce, ketchup, mustard, and honey in a large skillet. Toss the baked meatballs in the hot sauce to coat.
Serve the meatballs with celery and carrot sticks and some blue cheese dressing for dipping!!Enjoy!

Makes about 30 meatballs.

French onion mashed cauliflower

1 onion chopped
3 cloves garlic minced
3 bags frozen cauliflower
2 bouillon cubes
2 cups water
5 French onion laughing cow cheese wedges
1/4 cup parm cheese
1/4 cup cheddar cheese
Grape seed oil
Salt & pepper to taste

*Sauté onion & garlic in grape seed oil, add water & deglaze bottom of pot.
*Add cauliflower, bullion cubes & seasoning. Cook down until cauliflower is soft. If there looks like too much liquid cook it down some or drain some out. (You can save the broth incase you need to add some back in.)
*add all cheese
*talk hand blender & blend down until smooth.

Ranch Chicken

8 chicken breast
1-2 packs of dry Ranch seasoning
1 can far free cream of chicken soup
1 can far free cream of celery soup
1/2 cup of sour cream or plain Greek yogurt
Tony's chachere's seasoning

Mix soups & sour cream or yogurt with seasoning. If you want it less salty only use one pack of ranch seasoning. Put chicken in baking dishes & spread mix over the chicken. Sprinkle lightly, Tony's chachere's seasoning. Bake 375 for 40-45 mins.


Bean Salad

2 cans chick peas
1 bag frozen black eyed peas
1 red bell pepper chopped
1/2 small onion chopped finely
2 stalks celery chopped
1/3 Red wine vinegar
2 Tbsp Balsamic vinegar
2 Tbsp garlic grape seed oil
1/2 tsp Sea salt
Black pepper to taste
Red pepper to taste
1-2 Tbsp Sweetener

Mix all together. If it seems to need more seasoning or more red wine vinegar add now in small amounts until it fits your taste.
Add a little feta or goat cheese if you would like.
