Enchiladas *inspired by my Sister! :)

green chicken enchilada casserole
4 to 5 Chicken Breast cooked and cut or or shredded
1 jar Herdez Salsa Verde
1 16 oz. Sour Cream
1/2  block of Cream Cheese
1/4 onion
1 bunch of cilantro
1 can of green chilies chopped or a jalapeno or two
*Add all above and put in blender, blend up until smooth. This is your sauce for the casserole.  Save some for after it bakes to add on top if you like.
18 corn tortillas
1 can of corn
4 cups of cheese
cumin
chili powder
*bottom layer, green sauce, 6 tortillas, 1/3 of chicken, 1/3 can of corn, cheese,sprinkle cumin and chili powder on top for extra flavor. Then repeat another layer same way, last layer when done add green sauce and more cheese to end.  Bake 350 for about 30 to 40 mins. I like to broil it the last few mins to make the cheese brown some. 
Serve with some of the sauce drizzled on top if you would like or with the salsa above. :)
