No Bake Chocolate Oatmeal Cookies
1/2 Cup Butter
2 Cups of Sugar
1/2 Cup of Milk
4 Tbsp of Powdered Cocoa
1/2 Cup Peanut Butter
3-3 1/2 Cups Quick cooking Oats
2 tsp of vanilla
Mix butter, Sugar, Milk and Cocoa in a pot and boil one min. Then add Peanut butter, Oats and vanilla and mix together and use a spoon to drop cookies onto wax paper to cool to set.

Ritz crackers
3 packages of Andes Mints
shortening
in a double broiler
or
a glass bowl set over simmering water
melt together
1 package Andes baking chips
add 2 tsp or so of shortening to thin chocolate out a little
using a fork
dip crackers into melted chocolate
lift out, shaking excess chocolate off
let set completely on waxed paper
Flourless Peanut Butter Cookies
1 Cup Peanut Butter
1 Cup Sugar
1 egg
1 tsp vanilla
Course Sea Salt
1 Cup Sugar
1 egg
1 tsp vanilla

Preheat the oven to 350 degrees F and place racks in the upper and lower third of the oven.
mix in a bowl, peanut butter, sugar, egg and vanilla until well combined. Spoon 1 tablespoon of mixture about 1 inch apart onto ungreased baking sheets. Flatten the mounds with the tines of a fork, making a crosshatch pattern on the cookies. Sprinkle coarse salt on top of the cookies.
Bake until golden around edges, about 10 minutes @350
Made these last week. The best Peanut Butter cookies ever!

Beef stew meat with potatoes & gravy
Stew meat
1 can fat free cream of chicken soup
1 can of fat free cream of mushroom soup
1 onion cut in slices
About 5 new potatoes quartered
Tony's chachere seasoning
Sea salt
Pepper
1/2 block cream cheese
1-2 cans of water
Cooked rice
Add onions, potatoes, season with salt & pepper. Add meat put cream of soup on top season with Tony's chachere and add one to 2 cans of water. Last 30 mins add 1/2 block of fat free cream cheese mix in until melted. serve over rice.

Cauliflower Potato Soup
1 onion chopped
2 garlic cloves minced
2 heads of cauliflower chopped in chunks
3 med sized potatoes cut in chunks
1/2 block fat free Cream Cheese
2 Tbs butter
1/2 cup fat free half & half
1/2 cut fat free Sour Cream
Bacon flavored Grapeseed oil (from Wildtree)
Sauté onion & garlic then add water scrape bottom of pot and then added cauliflower, potatoes & water to almost cover, cook until soft. May want to take out some liquid out so when you blend with hand blinder it's not too runny. Then add cream cheese, salt & pepper to your taste, butter, & about 1/2 cup of fat free half & half, 1/2 cup Sour Cream. Bend all together & serve with cheese on top.
