Making cookies



No Bake Chocolate Oatmeal Cookies



1/2 Cup Butter
2 Cups of Sugar
1/2 Cup of Milk
4 Tbsp of Powdered Cocoa
1/2 Cup Peanut Butter
3-3 1/2 Cups Quick cooking Oats
2 tsp of vanilla

Mix butter, Sugar, Milk and Cocoa in a pot and boil one min. Then add Peanut butter, Oats and vanilla and mix together and use a spoon to drop cookies onto wax paper to cool to set.

Thin Mints made with Crackers and Andes

Ritz crackers
3 packages of Andes Mints
shortening

in a double broiler
or
a glass bowl set over simmering water

melt together
1 package Andes baking chips
add 2 tsp or so of shortening to thin chocolate out a little

using a fork
dip crackers into melted chocolate
lift out, shaking excess chocolate off

let set completely on waxed paper

Flourless Peanut Butter Cookies

1 Cup Peanut Butter
1 Cup Sugar
1 egg
1 tsp vanilla
Course Sea Salt




Preheat the oven to 350 degrees F and place racks in the upper and lower third of the oven.
mix in a bowl, peanut butter, sugar, egg and vanilla until well combined. Spoon 1 tablespoon of mixture about 1 inch apart onto ungreased baking sheets. Flatten the mounds with the tines of a fork, making a crosshatch pattern on the cookies. Sprinkle coarse salt on top of the cookies.
Bake until golden around edges, about 10 minutes @350

Made these last week. The best Peanut Butter cookies ever!

Avocado Chicken Salad
chicken, cooked and shredded
avocado
mayo, just a little
green onion, sliced
cilantro
lime juice to taste
salt/pepper to taste

Beef stew meat with potatoes & gravy

Stew meat
1 can fat free cream of chicken soup
1 can of fat free cream of mushroom soup
1 onion cut in slices
About 5 new potatoes quartered
Tony's chachere seasoning
Sea salt
Pepper
1/2 block cream cheese
1-2 cans of water
Cooked rice

Add onions, potatoes, season with salt & pepper. Add meat put cream of soup on top season with Tony's chachere and add one to 2 cans of water. Last 30 mins add 1/2 block of fat free cream cheese mix in until melted. serve over rice.
